Description

These crispy Air Fryer Breakfast Burritos are packed with fluffy scrambled eggs, savory sausage, crispy potatoes, and melted cheese. Perfect for meal prep and freezer-friendly, they make mornings easier and more delicious!


Ingredients

– 1 large potato, chopped into ½-inch cubes
– 1 tbsp olive oil
– ½ tsp salt
– ¼ tsp black pepper
– ½ lb breakfast sausage (pork or turkey)
– 4 large eggs
– 2 tbsp milk
– ½ cup shredded cheddar cheese
– 6 large flour tortillas
– Olive oil spray or cooking spray


Instructions

1. Preheat your air fryer to 400°F (200°C).
2. Toss the potato cubes with olive oil, salt, and pepper. Place them in the air fryer basket and cook for 8 minutes. Shake halfway through. Remove and set aside. Lower the air fryer temp to 380°F (193°C).
3. In a skillet over medium heat, cook the sausage until browned and crumbly. Set aside, leaving a little grease in the pan.
4. Whisk together the eggs and milk. Season with a pinch of salt and pepper. Scramble them in the skillet with the sausage grease until fluffy.
5. In a large bowl, combine scrambled eggs, sausage, potatoes, and shredded cheddar cheese.
6. Evenly divide the filling among the flour tortillas. Fold and roll into burritos, securing with toothpicks if needed.
7. Lightly spray both the air fryer basket and burritos with olive oil. Place the burritos seam-side down in the basket.
8. Air fry at 380°F for 5 minutes. Flip and cook an additional 3 minutes until golden and crispy.
9. Serve hot! Optional: Drizzle with hot sauce or salsa.

Notes

Freezer Instructions: Wrap cooked burritos in foil and freeze for up to 3 months. Reheat in the air fryer at 370°F for 10-12 minutes.
Refrigerator Instructions: Store leftovers in the fridge for up to 3 days. Reheat in the air fryer at 350°F for 3-4 minutes.
